Yay! It’s time for Heather Long’s Lucky 13 Trick-or-Treat Blog Hop, and there are so many fabulous authors participating!

I’m a treat, which is good, because I don’t have fond memories of Halloween as a child. I remember being scared to walk up to a stranger’s house and knock on the door. I also remember my brother in a freaky mask jumping out at me, and even to this day, I’m not a horror fan.

But I love blog hops, because it gives me a reason to poke around other people’s blogs, and someone mentioned something about recipes, so I’ve decided to post a sweet treat recipe as my part of the hop. I make a disclaimer right now that I am writing this from memory and am an inconsistent baker. Sometimes it comes out awesome. Other times it is less than stellar. Hint: Just add more sugar.

TreatTikvenik – Bulgarian Pumpkin Pastry

What you will need:
- 1 package of phyllo dough
- 3 cups pumpkin (cut and boil and then smoosh)
- 1 cup sugar
- 1/4 cup powdered sugar
- 1 tbsp. cinnamon
- 1 cup walnuts (chopped or smooshed)
- butter or extra virgin olive oil

What you do to prepare it:
1. Take the pumpkin, wash it, and boil it in a pot of water. Once it’s soft, strain it and either shred it or smoosh it/mash it in a bowl
2. Preheat the oven to 350 degrees
3. Unwrap the phyllo dough and spread it flat
4. Add the sugar, cinnamon, and walnuts to the pumpkin and stir

Making the Tikvenik:
1. Using a brush or a spoon, spread the melted butter or extra virgin olive oil over the top phyllo sheet
2. Place a thin layer of pumpkin mixture on the phyllo
3. Take two phyllo sheets and roll them, so the phyllo is on the outside and the pumpkin is in the middle
4. Place the “log” on a baking sheet
5. Repeat steps 1-4 until you have used all the pumpkin and/or all the phyllo
6. Brush a light coating of melted butter or extra virgin olive oil over the tops of the “logs” on the baking sheet
7. Bake uncovered for 20 minutes and then cover for another 10 minutes
8. When you remove them from the oven, sprinkle the powdered sugar over the top

That’s it! Easier than pie!

I wish I had thought to take a picture of the last batch I made, but typing this recipe has made me hungry for more, so perhaps I’ll update this blog post with pictures from the next time I make this.
